Port Culinaire

The German gourmet magazine Port Culinaire which is published 4 times a year, dedicated a large part of its 15th edition to the gastronomic trend New Nordic Cuisine. Several Danish organic producers were interviewed and portrayed and there were articles about the New Nordic Cuisine and the Danish restaurant Noma, the number one restaurant in the world.


Denmark was chosen as the focus of the articles in Port Culinaire due to the new gastronomic wave of New Nordic Cuisine in Scandinavia and the interesting fact that the use of organic products is widespread in the Danish restaurant industry and that Danes are the people in the world that buy the most organic products. Organic Denmark therefore organised a trip for the journalists from Port Culinaire, Carola Gerfer-Ruhl and Thomas Ruhl, and the food scout Ralf Bos to show them the organic landscape of Denmark.

 

The Organic Tour of Denmark

The trip around Denmark started in Copenhagen with a stay at Axel, Hotel Guldsmeden that since 1999 has focused on a sustainable and meaningful operation.

 
Port Culinaire did of course also visit restaurant Noma in order to learn more about the new gastronomic trend, the New Nordic Cuisine.


On the second day, the organic tour took Port Culinaire from the city of Copenhagen to the countryside on the island of Funen, where they met the farmer Jan Algreen from Soeris who is known for producing rich organic vegetables, especially carrots.

A visit was also paid to Ørbæk Bryggeri and Naturfrisk who make organic beer, cider, soda, juice and smoothies. 
 

The organic caravan then moved on to Lars Skytte’s farm where lighter organic vegetables such as lettuce, salads and rhubarbs are produced. 
 

A stop was made for the night at Gram Castle in the southern part of Jutland. Apart from being a hotel, the castle also has large organic farm, a farm shop and cooking schools. 
 

On the third day, the morning was spent at the Organic Pork Producer Nikolaj Pedersen, a supplier to Friland A/S
 

The next stop was Naturmaelk that produces organic and biodynamic dairy products. The last stop on the organic tour of Denmark was Skaertoft Moelle that produces flour and grains and has won several prizes for their amazing product design.

 

Danes are Specialists in Ecology

The organic tour of Denmark showed the visitors a country where ecology and quality go hand in hand. The market for organic goods is highly developed and the consumers have confidence in the organic products and the authorities controlling the organic products. On the Danish market you will find many different organic products and you can choose between several types of the same product. The Danish organic producers possess a great ability to adjust to the market needs and you will find products that cater to both the price-conscious and quality-conscious consumers.


Danish organic food products now have a unique opportunity to really focus on the export markets due to the increasing interest in the New Nordic Cuisine. At the moment, the Danish export to the German market is blooming and the articles in Port Culinaire will hopefully clear the way for Danish export of high quality organic products not just to the German market but to the whole world.
