Three top Scandinavian chefs work their organic magic

Biofach 2010 visitors can look forward to the unique taste of Scandinavia, as Organic Denmark and the Danish Agriculture & Food Council join 47 organic exhibitors in welcoming them to this year’s joint Scandinavian stand.


In cuisine as well as the focus on nature and the environment, the Scandinavian countries have many things in common. This year they have joined forces in a Scandinavian organic food promotion. The main attraction is a kitchen and restaurant, where chefs Jesper Witt Paustian (Denmark), Paul Svensson (Sweden) and Kim Palhus (Finland) will form a culinary trio to present Scandinavian delicacies to the fair’s visitors.

 
- Each day a platter of 4-5 traditional Scandinavian dishes will be served. There will be Scandinavian salmon, pork or veal, a dish of seasonal vegetables and a variety of Scandinavian cheeses. The dishes will be accompanied by traditional Danish rye bread and a speciality, “Øland wheat bread”, says head chef Jesper Witt Paustian.


Simplicity, purity and freshness
The Scandiavian climate and sparsely populated areas, long coast lines and high mountains give rise to unique raw materials and culinary experiences. Scandinavian cuisine emphasises the taste of each individual component, and strives for simplicity, purity and freshness with the use of seasonal fruit and vegetables. Along with a natural consideration for the environment, this makes organic produce the obvious choice.

 
The products and raw materials used in the kitchen of the Scandinavian stand are identical to those displayed by the participating companies, and Jesper Witt Paustian is full of praise for the high quality organic raw materials Scandinavia offers.

 
- The organic producers and companies are highly committed to producing excellent products. And organic products are generally very rich in taste, so we will treat them carefully and present them as simply as possible, he states.

 
A total of 47 Scandinavian companies, 25 from Denmark, 10 from Sweden, 10 from Finland and two from Norway, are participating in Biofach 2010. The Scandinavian kitchen and lounge is located in Hall 1.

 
The Scandinavian kitchen is supported by Organic Denmark, Danish Agriculture & Food Council, Nordic Council, Food From Sweden and Organic Food Finland.
