In 1986 when Aalbæk Specialties switched to organic sausage production, the fact of not using nitrate, artificial flavouring and colorants as well as phosphates was unheard of in the butchery industry. And yet, Aalbæk kept hold of the vision of ecology and today supplies sausages under the motto: “What you see is what you get”.

Aalbæk Specialties is a sausage maker with deep roots in the Danish craft of butchery. The family business goes all the way back to 1920, which has provided valuable experience. Today, they are Denmark’s largest producer of organic cold cuts. They are especially known for their salami. They make their salami according to the old traditions of butcher craftsmanship, where loads of good, natural products and spices have resulted in awards in Denmark and abroad. At Biofach they will present a completely new concept called Fair Food. A new philosophy lies behind this concept with values such as a better environment and sustainability. In all, they will present:

• A new snack programme
• Fair Food
• A large charcuteri programme

To put more spice into life, they constantly develop new products. Therefore, the range grows on an ongoing basis and Aalbæk Specialties will not settle for just being the biggest in Denmark. Today, they export a significant volume of their specialties abroad, for example to England, Germany, France, Sweden, Norway, Iceland, Greenland and Ireland. They intend to continue this development so their products can give pleasure to the organic and quality-conscious consumer.
